I like to cook but sometimes I just want something quick and easy but nevertheless filling. I have a couple of meals that are just the job...

Chicken a la Chris! (named after my mother who invented it - bless her soul. She'd be turning now if she knew I was sharing her secret recipe!)
Cook some chicken, fry some mushrooms and onions,
Throw them in a saucepan with two tins of cream of chicken soup.
Some black pepper and cumin in with the above.
Serve with rice or pasta!
Delicious! Other than cooking the chicken it takes 10 or 15 minutes. With pre-cooked chicken you're laughing.

Tuna spud delight!
Microwave or bake some potatoes.
Cut them up and add more butter than is good for you.
Add a tin of tuna, some raw onion, some chopped boiled eggs and some coleslaw.
All ready in less than ten minutes. Scrumptious.

So, anyone else got some other good idea's for those days you're feeling lazy and hungry.

we have cooked a lot from them and the food is tasty and filling and generally healthy as well, and the prep work and coooking is easy and quick, supposed to be 15 min meals and the results are great, you can pick the books up on line at good prices and I would highly recomend them.

Any specific recipe you can recommend? Pref something without cheese. It's mouldy stuff that's been left to rot and nobody should eat cheese! 🙂

Lot's do have cheese, which I love.....

Chicken and chorizo bake is good, its just chicken breast, chunks of cherizo and then any veg you like chopped, put the chicken breast in whole, chope the veg chorizo around it and just put it in the oven, put some oil on it and season and it's as simple as that.

Haven't made it for a while, but egg fried rice was always a favourite. Make some easy cook (boiled) rice and when it's done lightly fry in a wok either chicken cubes or quorn chunks, once they are done, add the rice to the pan and keep turning it over. Add a couple of raw eggs and using a large spatula, keep cutting the mixture and turning it over - this cooks the eggs into the rice and mixes it evenly. When the egg is cooked, at peas and some turmeric (adds a nice colour) and all done. Very quick and easy.
