If you look in 'Settings\Messages\Send & Receive', you will see that you can multiple email addresses and phone numbers through which messages can be sent and received on that device.
You can add multple email addresses ( and iMessages can be sent using just email address).

This is what your ex has done. Added your child's email address to the list.

When you next have your child to stay over, check and ask him/her to remove all in the list but the phone number.
I am sure that you cannot add other phone numbers to the send & receive list, just multiple email addresses.

Get him to set it so's only the his phone number is listed in his 'send & receive' list.
Then as extra insurance change the password as well.

IPAD can only receive imessages, So if you send him text messages not imessages the father cannot see it. You can do this in two ways.
1. Switching off imessaging in settings
2. Send message as text rather than imessage(when you're about to send the message you should have the option to send as a text or imessage.

Hope that helps

Thanks, think in gonna have to turn my iMessage off cause I checked his setting and the only email and number in there are his and his Apple ID, they must have the same Apple ID set up on both iPhone an ipad
