Hi people,

Just wanted to try something different in terms of meals. Was wondering if anyone had any quick and easy to follow recipes which tastes delicious.

Thanks

My 'speciality' is egg fried rice. Use easy cook rice and boil it. The leave it to air (or put it in the fridge to make it the following day). Heat a frying pan, cook some chicken chunks, throw in the rice and some peas and keep 'cutting' and moving the rice until it's hot. The chuck in some turmeric and eggs (one per person) and continue 'cutting' the rice and eggs until the egg stops being runny and will be evenly distributed in the rice. Assuming you have the boiled rice pre-prepared, takes about 5 - 10 minutes.

if you haven't already got one.....get yourself a slow cooker......the stews and stuff you can cook in them is just endless, great for this time of year and once cooked you've got a few good meals and lunches out of it.
Joints of meat or chicken in them is just to die for....litterally melts in your mouth!

mine this weekend started out as beef and veg stew and last night i threw in a tin of choped tomatoes, extra veg and chilli flakes in it.....[censored] my lips are tinglling this lunchtime but mmmmm so tastey.
i'm sure if i told you everything i put in it you'd think me mad but it certainly works the tastebuds for me 🙂

Get a big one - I used to have a large slow cooker and it was brilliant for soup in winter - hot and tasty and ready as soon as you walk through the door, then chuck in some extra ingredients and it's permanently ready. Got a small slow cooker a couple of years ago and it was useless.

I am not sure about who is best - I love cooking but then when I do it I make sure I have loads of time. My wife is often cooking in a hurry but I would say she is a better cook (and she is peering over my shoulder!!!)

Simon's Chicken:

Fry some onion and garlic in a saucepan. Add a tin of toms, herbs, more garlic (optional), any spices you like maybe piri-piri?

Dry fry a chicken breast (diced) or chicken pieces, add to saucepan.

Mix in some peas and sweetcorn (any veg really, but have only made it with these before!)

Transfer to a glass dish or "lasagne type" dish.

Cover with breadcrumbs (have only ever made fresh) and top with some grated cheese. Or you can make a cheese/ white sauce to go with. One pot wonder, invented by an ex's friend. Recipe stayed.... he didn't !
