I seem to recall that the tribunal did ask for all financial records (this was along time ago, so can't remember for certain) but I would think that you should be able to request that they are for the tribunal only to look at to verify your figures, and not for your ex to see. GDPR might be sufficient to help there, but might be worth contacting CMS for clarification.
there have been a couple of other threads on here about tribunals. common documents HMRC asks to see are company accounts if you run one, or self assessment paperworks if your self-employed. they may ask for bank statements. all the ex can do is complain to them that she thinks your hiding money, or living beyond your means/extravagant lifestyle etc
@LosingTheWill this was incredibly helpful. With regards to non-disclosure on grounds of data protection, did you not receive a fine? Was there no other penalty?
