I have verbally been granted permission to take my children on holiday to Spain and am awaiting for a consent letter to be written and signed having just paid for the flights, such information is needed.
What is required in terms of legal protection for a consent letter? Would it be safe to actually log this with my ex’s solicitor? Although it would be extremely stupid of my ex to try and claim that I have forged a consent letter and taken the children without her consent, but would such a claim be valid and what action can I take to prevent such an allegation?

I think a letter of consent will be sufficient, you would need to take it with you just in case you are required to show it at Passport control.
Have a word with your solicitor and see where you stand with it. If you dont have one then the CAB might advise, quite a few solicitors offer free initial consultations, you could use this to get some free advice.
The only action you could take would be to secure a Specific Issue Order before travelling...do you feel this would be necessary? Can you see your exgoing to those lengths, it would upset the children too.gi
Have you got their passports? That's something you need to sort out sooner rather than later.
