I am paying university fees for a 20 year old who has just completed his first year, and had agreed to pay through to the end of the 2021/22 year - a three year course.
He now tells me he wants to switch courses and start another three year degree, and will want to continue to do a Masters.
So, three questions:
1 - Do I need to continue to pay for education beyond the original three year term - so four years in total
2 - If so, at what stage can I stop, especially if he goes on to do a Masters and a further three years
3 - What happens when I retire at the end of 2021

i assume your paying as a private arrangement. if you are paying through child maintenance service, you would not be expected to pay maintenance at all from the point a child starts university.
It's up to you. You can honour your original agreement, or carry on paying for next few years.
Non-resident parents are not required to pay maintenance when young adults leave non-advanced full time education and your income would not be taken into account by Student Finance.
If your son lives with you, your income would be taken into account when your son makes an application to Student Finance and the question regarding your retirement would need to be directed to SF.
