Hi there
Not sure what app you use for video calls however I currently use Skype and this has a function to record the call and then at the end of the call both parties are provided with a copy and an option to download and save a copy of the call.
You would need to get your exs permission to do so which may trigger concern as to why you wish to record and may lead to a stop on the calls, unless they are court ordered in which you could suggest (via the court, cafcass or solicitors) that they are recorded for your records and to review in future with your child just as much as you would take photos of when you meet them.

Even though so young, the child remembers everything he did when he spent time with us, all the fun they had with us before new partner was on the scene and stopped contact for a year, so I completely understand this perspective from the child will hopefully continue and their good memories of us, will continue to be built upon when he is allowed to spend time in our home again and see us again post video calling.
